Chicken with Spicy Peanut Sauce

This is an easy dish that I make a lot. It’s very simple and doesn’t take that long to make and it tastes really good (well in my opinion anyway). I was kind of bored last night so I decided to take some pictures of the process and put this up on my blog. I hope you enjoy it.

INGREDIENTS
These ingredients serve two people, but I usually double it.
  • 1lb. Boneless chicken breast
  • 1 tbsp. Oil
  • 2 scallions, chopped
  • 2 garlic cloves, minced
  • 1 tsp. chili powder
  • 3 tbsp. peanut butter (preferably chunky)
  • 4 tbsp. water
  • 1 tbsp. soy sauce
  • 1 tsp. lemon or lime juice
  • 1 tsp. sugarsalt and pepper, to taste
STEPS
1. Cut chicken into bite sized pieces. This allows for the chicken to be cooked evenly and for it to be eaten more easily.
2. Heat oil on medium heat in skillet. Saute scallions, garlic, chili powder for one minute. Remove from skillet, leaving as much oil as possible.
3. Turn up heat and brown chicken pieces until approximately half cooked. Remove from skillet.
4. Turn heat down to medium. Add peanut butter, water, soy sauce, lemon or lime juice, sugar. Mix well. Add water if sauce is too thick. Add salt and pepper to taste.
5. Add chicken, scallions, and garlic back to skillet. Stir to coat chicken. Cook on medium heat for 5 to 10 minutes until chicken is cooked through.
6. Serve on a bed of rice and enjoy!
